Rainy weather recipe: Toffee apple crumble
On those cold rainy days, bake yourself something sweet to warm right back up. As one of my favourite cold weather desserts, this recipe is a little twist on the classic Sunday lunch staple but makes for a much tastier dish and will impress family and friends alike.
Toffee Apple Crumble (serves 2)
Ingredients:
For the filling:
2-3 large cooking apples
100g of caster sugar
25g of butter
1 tablespoon of golden syrup
A splash of water
For the topping:
800g of plain flour
50g of brown sugar (plus a sprinkle extra for the top)
50g of unsalted butter
Ice cream (to serve)
To make:
1. Chop the apple into small chunks, removing the peel and the core. Place in a saucepan with a splash of water and simmer for 5-10 minutes.
2. Add the caster sugar, butter and syrup and leave the mixture until it thickens.
3. Meanwhile, combine the plain flour and brown sugar in a bowl and rub in the butter with your fingers until the mixture resembles breadcrumbs.
4. Spoon the apple filling mixture into two ramekins and top with the crumble mix and a sprinkle of brown sugar.
5. Bake at 180⁰ for 30-40 minutes or until golden brown. Serve with ice cream for an extra treat!
