How To Make The Perfect Cheese Toastie (Plus 10 Of The Greatest Recipes Known To Man)

Once upon a time I worked at an ice rink. It was one of those pop up jobbies that paid minimum wage for you to freeze your tits off and listen to Christmas songs on a loop for two delightful months. It was an okay location for celeb spotting (I once saw the girl off Torvill and Dean) and when it was really quiet you could totally get away with sleeping on the shelves in the cloakroom.
It was actually a pretty nice gig and for a few years each festive season, a gang of us would descend upon the temporary huts to hand out boots and issue wristbands. Some pretty solid friendships were formed during that time.
What has this got to do with cheese toasties, I hear you ask?
Well, it was during those formative years my life was changed forever. I was on a five minute break huddled by the blow heater nursing a polystyrene cup of cocoa in the staff cabin. A boy was in there. Not a lowly cloakroom skank like me, a superior human, one who could skate and was allowed on the ice in front of the public. We made smalltalk; how tea was better with sugar, which one was Torvill and which was Dean. Then the subject of cheese toasties came up.
This boy had spent some time in America, it was there he learned you don’t need a toastie maker to achieve a good toastie in this life. In fact, the technique required to get that dreamy combination of oozing melted cheese between two pieces of butter-crisped bread was far simpler and didn’t involve a gross machine that cannot physically be cleaned.
All you have to do is butter the outside of both pieces of bread, lay one piece (butter down) in a frying pan, pile the cheese on top and place the other piece (butter facing outwards) on top of that. Place the pan on the heat with a saucepan lid over it, leave for a minute or so, flip with a spatula, squash down and replace lid. Works. Every. Time.
Of course, this technique can be adapted for any filling (as long as cheese is involved). No fancy gadgets necessary.
