Pumpkin Soup

Pumpkin soup in the fall is something that never gets old. It's healthy, super-creamy, and keeps you cozy. You can use various winter squashes to make this soup, but our top two favorite types are sugar pumpkins and kabocha squash, with calabaza and butternut squashes as runner-ups. Some squashes will take longer than others to cook, so be sure to keep the simmer going until the squash is completely softened and fork-tender for the creamiest soup texture.

Homemade Chicken Soup

For centuries, cultures around the world have put their unique stamp on chicken soup. We love each and every one, from the Greek avgolemono to the Jewish matzo ball soup, but when it came to developing our forever favorite version, we chose to strip it back to focus on the essence of the dish: the tender shredded chicken and that rich golden broth it creates.

Don't let the time commitment on this fantastically flavorful pozole recipe scare you. It's as easy as bringing water to a boil and letting it simmer away while you multitask on other things going on in your life. The longer you let the soup simmer, the better it will be. With time, the meat will turn tender, soft, and buttery, the aromas will deepen, and the color will become as rich as the soup tastes.

One-Pot Harissa Beet Soup

This vegetarian soup can (and should!) be enjoyed year-round. It has a perfect balance between sweet, smoky, and spicy. The ruby red beets add sweetness and a mellow, earthy flavor. Potatoes help thicken the soup and add body without including any extra dairy or gluten, while the harissa paste adds a peppery kick. If you like things spicy, use a harissa paste labeled as such. If not, use a jar labeled “mild.”

Lemony White Bean & Potato Soup

Beyond its incredible taste, what makes this recipe truly great is its ease and adaptability. Alongside pantry staples of potatoes, beans, and lemons, you can switch up the herbs to match the season—rosemary in winter or parsley and dill in spring. But don’t skip the Parmesan rind; it adds a subtle nuttiness and salty richness to the broth (we always keep a couple stashed in the freezer for this purpose).

Tomato Soup

There's really nothing more comforting than a steaming hot bowl of tomato soup. We prefer using canned tomatoes rather than fresh because they tend to be packed in peak season—that means they're perfectly ripe! PLUS, the skins are removed. That means less work for you! If we were you, we'd serve this with our antipasto grilled cheese—makes for a complete (and extra-hearty) meal.

Canned coconut milk makes this flavorful soup super-creamy and rich while keeping it conveniently dairy-free. Just a tablespoon of fish sauce adds depth and makes this soup feel that much more special. A sprinkle of chopped fresh cilantro at the end ties in all the flavors and makes it look ultra-appealing. Cream of Turkey Soup

It’s not what you’re thinking. Campbell's cream of chicken soup is NOT playing any role in this recipe. Any soup labeled "cream of'' might trigger the idea of a broth-based soup thickened with a roux and cream… that’s about it. If you’re lucky, there might be some pieces of chicken hanging out in there, but good luck. We’ve decided that cream of turkey soup wouldn’t have that reputation. Instead, it’s going to be a warm wholesome soup with celery, carrots, poblano chiles, shiitakes, and bits of turkey (maybe with those Thanksgiving leftovers?!).

Instant Pot Pho

The primary job of a great soup, other than providing tons of flavor, is to give you that warm, stick-to-your-ribs feeling. Few soups do that as well as a heaping bowl of pho. The Vietnamese beef bone-based soup is usually chock-full of noodles, fresh herbs and any number of toppings like cilantro, bean sprouts, thinly sliced round eye, or even meatballs. The true star, however, is the broth itself.
