The One-Pot Pasta My Family Begs Me to Make

A quick and easy dinner my family has recently become obsessed with is Christine’s cheeseburger casserole. It combines two of the foods my kids love the most: burgers and pasta. To them, it’s the best of both worlds, and I absolutely agree. It’s cheesy, hearty, and so incredibly simple to make. All of the ingredients are easy to get, and if you’re like me and need to get dinner on the table as quickly as possible, this perfect (and extremely comforting) meal checks off all the boxes.

How to Make Cheeseburger Casserole

First, you’ll sauté a diced onion with lean ground beef until the beef is slightly brown and the onion has softened. To this, you’ll add Worcestershire sauce and tomato paste, cooking until slightly reduced and darkened in color. Then it’s time for beef broth and a can of diced tomatoes. Once it comes to a boil, you’ll cook the pasta.

Now here comes our favorite part: the cheese. Stir in some of the cheddar cheese until it’s melted, then top with even more cheese. Now you can cover the pot with its lid and let it rest for a few minutes to melt, or you can place the whole pot under a broiler and let it get nice and toasty brown. (This is our favorite!)

Just like that dinner is served in 30-ish minutes. The fact that it’s quick and easy is a major plus, but there is truly nothing better than sitting around the table knowing everyone’s in love with their dinner.

What Makes Cheeseburger Casserole So Good

There’s just something about melted cheese and pasta that warms up the soul, and this cheeseburger casserole is comfort food at its finest.  There’s so much flavor coming from the beef sauce (thanks to the reduced tomato paste and Worcestershire sauce), it’s hard to believe it comes together so quickly. And because the pasta cooks right in the sauce, it takes on all that deliciousness. Plus, cleanup is way easier.

If You’re Making Cheeseburger Casserole, a Few Tips

  • Make sure not to skip out on the Worcestershire sauce. It packs so much flavor! Skip it and you will definitely notice the difference.

  • If you have time to pop it into the broiler, you won’t regret it. The cheese gets perfectly melty, creating those delicious gooey pockets we all love.

  • Add a fresh garnish. Top with leftover onions or scallions cut on the bias.
