Blackberry Black Ven cocktail

I always keep some blackberries in my freezer for a rainy day, along with loganberries and tayberries from my neighbour’s garden. Frozen berries can be blended or pushed through a sieve without losing any colour or flavour. For this cocktail, I’ve also used Black Ven rum, which is made near me in Lyme Regis.

Ingredients

  • 60g blackberries, fresh or frozen, plus extra to garnish

  • 1 tsp demerara sugar

  • 1 large egg white

  • 100ml dark rum, or more if you wish

Method

Step 1

In a blender, whizz together 60g fresh or frozen blackberries and 1 tsp demerara sugar along with 40-50ml water until you have a smooth purée.

Step 2

Put a handful of ice cubes in a cocktail shaker and add 1 large egg white. Shake for 30 seconds, until smooth and frothy.

Step 3

Pour in 100ml dark rum and the blackberry purée, and continue shaking for another 15-20 seconds to combine fully.

Step 4

Strain into glasses and garnish with a fresh blackberry.
