Mindy Kaling Says This Fall Soup Is the "Best Thing" She's Ever Cooked

One of the most beloved aspects of the seasons changing and the weather cooling is that it ushers in soup season, and for fans of hearty cold-weather cozy soups and delicious broths, there’s no better time to get into the kitchen.

Beloved actress and comedian Mindy Kaling appears to be an avowed soup lover herself — she even starred in a Campbells soup commercial a few years ago — and so it wasn’t all that surprising she recently made a video post to Instagram, showing herself cooking a soup recipe she had learned from  Maxine Sharf of @maxiskitchen.

Kaling’s rendition of “quickie dumpling soup” could not be easier, and involves throwing frozen dumplings into a Thai red curry base, which she then flavored with fresh basil from her own home garden as well as garlic, coconut milk, bok choy, and bell peppers. Kaling was so excited at her own cooking prowess, she even compared herself to a famous member of the royal family known for playing chef at home.

“I’m freaking Meghan Markle over here,” she said, referring to the Duchess of Sussex, who at one point had a cooking blog herself and has a cooking and gardening program in the works at Netflix.

“This Thai curry looks like it was cat food, but it smells delicious,”  Kaling commented as she blended the tin of red curry paste with the rest of her ingredients, such as chicken stock, fish sauce, and what appeared to be sugar as well as fresh lime juice.

While Kaling may not be a chef herself, her recipe video got a lot of star attention, with celebrities such as Angela Kinsey of The Office commenting. “My husband is a huge soup fan. He’s gonna love this!” she wrote. Reese Witherspoon was also excited: “Soup lovers unite!” Kaling appeared to be a fan of her soup as well, saying it was “Maybe the best thing I’ve ever made!”

The beauty of throwing frozen dumplings into a soup such as this is it’s an instant way to add a dimension of texture and flavor, and also there’s all kinds of varieties — a spot such as Trader Joe’s has frozen dumplings with everything from vegetarian to chicken or pork filling. It can lead to all sorts of seasonal soup possibilities.
