What Makes This Chocolate Chip Cookie Delight So Good
Many delight recipes (like this coconut delight or our caramel apple delight) feature a graham cracker crust, but Patty opts for a crumb crust made with crunchy store-bought chocolate chip cookies (yes, you read that right!). Crunchy — not chewy or gooey — chocolate chip cookies are the move here because they can be processed into fine crumbs. The crushed cookies make for a dessert that brings chocolate chip cookie energy to every bite.
As for the filling, Patty put a lot of careful consideration into every layer so that the entire dessert eats like one big chocolate chip cookie. First, there’s the rich chocolate pudding, made from just instant chocolate pudding mix and milk, which mimics melty chocolate chips. Once spread onto the crust, the pudding gets topped with a cheesecake layer followed by a whipped cream layer, which are both sweetened with brown sugar just like chocolate chip cookie dough. Scatter a handful of mini chocolate chips and even more crumbled cookies over the top to finish. I highly recommend saving extra slices for yourself; it’ll disappear quickly.
